Vanilla & Raspberry Cheesecake Bites

Makes 22 Balls

Ingredients
- 300g plain digestive biscuits
- 150g light cream cheese
- 60g Vanilla Ice-Cream Fuelled Whey Protein Powder
- 1 tbsp milk of choice
- 1 tsp vanilla extract
- 100g fresh raspberries
- 360g white chocolate (to coat all balls)
Method
- Blend biscuits to create a crumb.
- In a large mixing bowl, mix together the blended biscuits, cream cheese, vanilla Fuelled Whey Protein Powder, milk and vanilla extract to form a dough.
- Lastly, very carefully fold through fresh raspberries.
- Roll mixture into balls and place on a plate with baking paper. You will need to be quick with the rolling as the mixture is quite wet. Place the plate of rolled balls into the freezer to set.
- Melt white chocolate.
- Once the balls have set, remove from the freezer and carefully roll each ball into the melted white chocolate using a fork to coat. Place back onto the baking paper and back into the freezer to finish setting. Store balls in the fridge.
