Lemon & Blueberry Pancakes

Ingredients 

  • 60ml milk of choice
  • 125g cottage cheese
  • 2 eggs, separated
  • 50g plain flour
  • 35g Vanilla Ice Cream Fuelled Whey Protein Powder
  • Juice of ½ lemon
  • Zest of 1 lemon
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Pinch of salt
  • 100g blueberries
  • Honey for serving

Method

  1. Firstly separate your eggs and keep egg whites separate.
  2. Blend together milk, cottage cheese, egg yolks, flour, vanilla Fuelled Whey Protein Powder, lemon juice, lemon zest, vanilla extract, baking powder and salt.
  3. In a separate bowl, whisk egg whites.
  4. Pour pancake batter into a large bowl. Add the whisked egg whites and fold through gently. This will give you fluffy pancakes!
  5. Heat a large nonstick pan with oil or butter.
  6. Using an ice cream scoop, carefully drop batter into the hot pan. Place 4-5 fresh blueberries onto each pancake straight away. Cook for a few minutes until the bottoms have browned.
  7. Carefully flip and cook the other side.
  8. Add more oil or butter to the hot pan and repeat until you have used all the batter.
  9. Stack up onto two plates and drizzle with honey to serve.
