Cherry, Vanilla & Coconut Oat Slice

Ingredients
- 300g oats
- 250g pitted dates, soaked in boiling water
- 80g coconut oil
- 70g Vanilla Ice Cream Fuelled Whey Protein
- 1tsp cinnamon
- 400g frozen pitted cherries
- 1 tbsp maple syrup
- 2 tbsp chia seeds
- 25g desiccated coconut
Method
- Pre-heat oven to 180 degrees and prepare an 8x8 inch tin.
- Add frozen cherries and maple syrup to a small saucepan and heat over a low to medium heat. Once they start to soften, remove from the heat and mash with a potato masher. Add chia seeds, mix and leave to cool and thicken (this creates a jam consistency).
- Blend together oats, soaked dates, coconut oil, vanilla Fuelled Whey Protein Powder, cinnamon and salt until a thick dough-like consistency forms.
- Add ⅔ of the mixture to your prepared tin and press down firmly until evenly spread.
- Carefully pour your cherry chia jam over the base until evenly spread.
- Sprinkle desiccated coconut all over.
- Finally, crumble the remaining base mixture all over the top to create a crumble top.
- Bake in the centre of the oven for 20-25 minutes until golden. Remove from the oven, leave to cool and slice into 12 squares.
