Cherry, Vanilla & Coconut Oat Slice

Makes 12 slices

Ingredients 

  • 300g oats
  • 250g pitted dates, soaked in boiling water
  • 80g coconut oil
  • 70g Vanilla Ice Cream Fuelled Whey Protein
  • 1tsp cinnamon
  • 400g frozen pitted cherries
  • 1 tbsp maple syrup
  • 2 tbsp chia seeds
  • 25g desiccated coconut

Method

  1. Pre-heat oven to 180 degrees and prepare an 8x8 inch tin.
  2. Add frozen cherries and maple syrup to a small saucepan and heat over a low to medium heat. Once they start to soften, remove from the heat and mash with a potato masher. Add chia seeds, mix and leave to cool and thicken (this creates a jam consistency).
  3. Blend together oats, soaked dates, coconut oil, vanilla Fuelled Whey Protein Powder, cinnamon and salt until a thick dough-like consistency forms.
  4. Add ⅔ of the mixture to your prepared tin and press down firmly until evenly spread.
  5. Carefully pour your cherry chia jam over the base until evenly spread.
  6. Sprinkle desiccated coconut all over.
  7. Finally, crumble the remaining base mixture all over the top to create a crumble top.
  8. Bake in the centre of the oven for 20-25 minutes until golden. Remove from the oven, leave to cool and slice into 12 squares.
